Introduction

Star anise, commonly known as star anise, is the dried mature fruit of the Illicium verum tree, a plant of the Illicium family. It is a star-shaped brown-red fruit with eight corners, each containing a seed. Star anise is native to Asia and is widely grown in China, where it is an indispensable spice in many Asian dishes, such as allspice and curry powder. Star anise has a strong aroma with a sweet and slightly bitter taste, which can add a special aroma and flavor to food. It is not only used in cooking, but also in making perfumes and certain traditional medicines. The volatile oils contained in star anise have antiseptic and antibacterial properties.
